Meet Ralph

A few posts ago, you saw our pumpkin carvings. Tyler's pumpkin Ralph was created for a very special purpose. He was the key ingredient in our ingenious appetizer. What do you think?


I think it looks more like a pumpkin decoration on a plate rather than a pumpkin actually throwing up, but regardless, his vomit was delicious. Guacamole probably would have looked more authentic, but I am in love with this new Avocado Relish that I found in a Costco cookbook. It is like Salsa, heavy on the avocado. YUM! It is supposed to be heaped on Chicken (which is excellent as well), but it stands well with just chips. Heck, I could probably eat it straight out of the bowl.

And of course I will give you the recipe. It would be cruel to talk it up and then leave you hanging.


Avocado Relish

3 large avocados, diced
1 large tomato, diced
1 medium red onion, diced
1 jalapeno, finely chopped
Juice of 1 lime
1 tablespoon olive oil
Salt and freshly ground pepper
½ cup fresh cilantro, roughly chopped

In a medium-size bowl, combine avocado, tomato, onion, jalapeno, lime juice and olive oil. Season to taste with salt and pepper. Gently fold in cilantro.

*I usually only use half a red onion and maybe some green onion too. A fresh lime is much better than lime juice in your fridge. And I don’t put cilantro in and it still tastes amazing.


p.s. Ralph won the prize for best food. We are so proud of him. And now I am craving chips and salsa.

p.p.s. I was the pickiest eater growing up. You couldn't pay me to eat avocado or almost any of the ingredients in Salsa. (Seriously, I lived on Peanut Butter and Macaroni and Cheese.) I'm so glad taste buds change as you get older. So, maybe that will give hope to those parents with picky eaters out there.

That pumpkin totally looks like he's vomiting - good work! And I totally hear you on the picky eating thing, I never eat the salsa.
